Amazing soup that Ginny served!
1 large onion, chopped
2 t. sesame oil
5 c vegetable broth
4 med carrots, grated
1 1/2 t curry poweder
1 t thyme
1 bay leaf
3 oz. cream cheese, cubed
5 T fresh parsley
1/4 t salt
dash cayenne
Saute onion in oil. Stir in broth-bay leaf. Bring to boil. Reduce heat and simmer uncovered 25-30 min. Discard bay leaf. Cool slightly and in two batches blend in blender with cream cheese. Heat and add salt to taste. Garnish with parsley and cayenne.
