This is another one of my all-time favorites, thanks to Laura....thanks to Sam:) I am writing this one off the top of my head.....I may have to edit it if I find the recipe....I think it's complete but I may have missed something.
1 can of corn, drained
1 can of red beans, rinsed and drained (I USE BLACK BEANS)
1 bunch of green onions, sliced
1 large jar of salsa (16oz or so)
2 c. shredded cheddar cheese
Stir it all together and serve. Makes a good amount.

I am making this for the PTO teacher luncheon and realized I use black beans. Just an FYI
